Happy Thursday! This post is late but now you can use it this weekend to prepare for next week. I love food prep and having healthy options ready for the week so that I won’t eat out or snack on packs of saltines at work is so beneficial. I love saltines, I get it from my dad.

Listen, I know food prep is time consuming and then you are left with a pile of dishes to clean BUT you have a fridge full of food for the week and you will have less dirty dishes throughout the week (maybe). You don’t have to spend hours on it, keep it simple. Pick a few dishes, make a grocery list and then get started. I like to make lunches for the week, 1-2 grab n go snacks and one dinner that will last us a few days. Here was my plan last week:

— Sweet Potato Black Bean Quinoa Bowls ( I added meat)

— Mexican Chicken & Quinoa Casserole (I make this all the time and it lasts us 3 nights for dinner)

— Coconut, cashew and cranberry energy balls

— Apples with almond butter for snacks

It took me an 1.5 to cook it all and clean up, not too shabby considering I can waste 3 hours binge watching Hart of Dixie on Netflix (don’t judge.)

My trusty sidekick Meezmo supervised, he doesn’t quite fit that basket.

One tip: keep a bowl for all your food scraps as you go so you don’t have to go back and forth to the trash.
