Good morning! Happy Weekend. The anticipation of the weekend is always met with my long list of “thing I want to accomplish”. I woke up this morning, rolled over to Darin and said, “I’m going to go make some coffee and then organize my closet, clean the bathrooms, go to Home Depot for some paint and then paint the bedroom furniture set.” All of this was supposed to happen before going to work today. Hmm.. I’ve completed step 1- make coffee.

Don’t you just love fresh produce? It’s so colorful. And even more beautiful and tasty when it comes from someone’s garden. My mom sent these home with me after visiting them last weekend. Her neighbor drops off produce to them all the time at of the kindness of his heart. I need to find a neighbor like that. All I get from my neighbors is them throwing their tree limbs in my yard…

Besides beautiful produce, flowers warm my heart. These were delivered from a cute man last night after a week away from each other. It’s weird how we dated long distance for 2 years and now a few days away seems like forever. <<Lame, I know. But it’s true!

A recent purchase of mine, in effort to rid myself of the mass quantities of chemicals I’ve been in-taking over the years.  Primal Pit Paste offers a natural deodorant that has rave reviews online. The main ingredient is Coconut Oil. I’m telling you this stuff cures anything. {Lavender for me, Unscented for him} I’ve used it for 3 days and like it so far. I’ve asked people if I smell and they say no. Who knows if they tell the truth…

One productive thing I’ve done so far today is made a new recipe. Healthy Cinnamon French Toast. You don’t have to deny yourself delicious food for the sake of health. Actually, healthy food should taste better. Now if you are eating those 100 calorie packs of Reduced Fat crackers, no those won’t taste better. But if you use fresh, healthy ingredients- you will produce a delicious result.

Healthy Cinnamon French Toast

(Gluten Free, Sugar Free)

Mixings:

  • 6-8 Slices of Gluten/Grain-Free Bread (can use regular if you wish)
  • 2 Eggs
  • 1/2 Cup of Almond/Coconut Milk
  • 1 Tsp of Cinnamon

Steps: Mix together the Eggs, Milk & Cinnamon. Dip the bread one by one in the milk/egg mix. Heat up a skillet or griddle to medium heat and add a small bit of oil. I use spray Coconut Oil <<the bomb. Cook for 2-3 minutes on each side until lightly browned and the egg is fully cooked. Top with fresh fruit & maple syrup!

Invite your friends over for a Sunday Brunch and set up a French Toast Topping Station. Fresh Fruit is what I had on hand but add some Pecans, Shredded Coconut & Chocolate Chips to the mix- yum! Mimosas on the side for optimal enjoyment.
