Good morning loves! I had grand plans of posting on Wednesday for you but my week got away from me. Thank God it’s Friday! We are headed to yet ANOTHER wedding this weekend! But I’m not one to complain about weddings, they are so fun! Darin’s cousin Ada is getting married so we are off to South Georgia. <<It’s going to be a HOT one. Around 90 at least and MAJOR humidity. I’m apparently all about the CAPS this morning 🙂

This morning started off with yet another Friday morning Boot Camp. During the week if I try to wake up early to work out it always ends up with me turning off my alarm and going back to sleep. And that’s for a 6am workout. But somehow it never fails that when my 4:20am alarm goes off for Friday Boot Camp, I’m up and at em’! I love boot camp classes, is that weird? I think it’s the being outdoors and feeling like I’ve already accomplished so much before 6am.

I followed it up with a Starbucks Grande Nonfat Misto with (2) Pumps of Vanilla << Yum Combo.

And my turtle friend Marty. Every morning I come outside, he’s there. Waiting for me.

Flavor

So I have a new recipe to share with you guys. I was wanting a sweet bread on Sunday but wanted to health-ify it. I knew I had some frozen bananas so I de-thawed those and played around with some different flours. The result was great but the top was a little crack-ly. It still tastes awesome.

Healthy Banana Bread (Grain Free)

Mixings:

  • 2 Bananas (the riper the better)
  • 2 Flax Eggs << link for how or 2 Eggs
  • 1 Cup of Brown Rice Flour (you can sub other flours for these two)
  • 1 Cup of Coconut Flour
  • 1/4 Cup of Coconut/Almond Milk
  • 1/2 Tsp of Cinnamon
  • 1/2 Tsp of Baking Powder
  • 1/3 Cup of Maple Syrup

Preheat oven to 350. Mix wet ingredients together. Add in dry ingredients and mix until smooth. Pour in a greased bread pan and bake for 30 minutes.

See the cracks and crevices below? I’m sure some of you bakers could tell me why this happened but I think it’s the Coconut Flour. It tends to not bake as well as other flours. You can sub other flours as well.

Slice it up and serve it with a dab of butter or coconut oil.

My favorite was a spread of Almond Butter. Justin’s MAPLE Almond Butter if your so lucky.

What I loved the most was the crust on the outside and the soft inside, deeeelicous.

Guys, I know I talk about Zuzana a lot but it’s for good reason. She will kick you butt. Literally! In this workout I did Wednesday morning, my buns were burning. You don’t like those saddlebags in a swimsuit do you? Neither do I and this workout will help lift that problem area. Only 12 Minutes and that’s all you will want. Best Butt.
