Good morning friends! The weekend is upon us and I’m more than happy to sit back after work with a nice glass of Malbec and some fresh mango salsa with chips. Is it bad that it’s 7am and I’m already dreaming of those indulgences this evening? Can’t. wait.
Also on the agenda for the weekend: spring cleaning! Followed by visiting downtown Mobile and exploring it’s attractions with our friends Brittany & Matt << so excited!
This morning started bright and early with 5am bootcamp. We went to the local university and did the following on the track: ran, ran backwards, lunged for a 1/4 mile, ran stairs, 80 push-ups, 80 mountain climbers, 80 squats, 80 side lunges, more running, more running backwards, more stairs… ahh! I was dying. Annnd I’m not going to be able to sit tomorrow. Work Hard, Play Hard right? 🙂
Speaking of, after a hard workout at the gym and dinner has already been eaten, Darin typically searches the kitchen for something sweet to eat. I, of course, am not desiring something sweet at all. Not one bit. <<Total lies, I love sweets. So I decided to whip us up some protein cookies. As Darin said, “I eat peanut butter, I eat eggs, these are healthy right?!”
(5 Ingredient) Peanut Butter Protein Cookies
- 1 Cup of Peanut Butter
- 4 Tbsp of Protein Powder (I used chocolate)
- 1 Egg
- 1 Tsp of Cinnamon
- 1 Tsp of Vanilla
Preheat oven to 350. Spray a cookie sheet with oil and then mix all ingredients together. Form into (8) balls and flatten out on a cookie sheet.
Press down in a criss-cross pattern with a fork and pop them in the oven for 10 minutes.
Take out of the oven and let cool until they are firm.
Unless you are impatient like me, and you eat them hot while they fall apart.
I served mine up with a nice glass of Coconut Milk- yum.
Going, going, gone.
These cookies are thick and filling, you can eat two and feel great. I think adding a chocolate kiss on top would be the best way to make them but chocolate doesn’t last long around this house so we improvise.
I hope you try them! You won’t be disappointed. Unless you don’t like peanut butter and then you will. 😉
