Good morning! Happy Wednesday and mid-week to you all! I hope you have all recovered from eating Cadbury creme eggs and are back on the healthy eating for the week! I’ve been guzzling water like it’s going out of style and eating massive salads for lunch. My new favorite salad toppings combo: Pumpkin Seeds, Goat Cheese & Balsamic Vinegar. It’s a good one.

As I have been doing lately, I’m sharing some recipes that I’ve been eating lately as I’m pretty terrible at photographing my daily eats. The following recipes are ones that I partook in yesterday! I hope you enjoy and as always, thank you to Jenn at Peas & Crayons for hosting this link up!

Flavor

Last night I was in a hurry to whip up dinner and had thawed out some ground turkey earlier on in the day. I wanted them to have a great flavor and I remembered my pesto in the fridge. I could eat pesto by the spoonfuls but that’s a story for another day…

Pesto Turkey Burgers

Makes 4 Burgers

  • 1lb. of Ground Turkey
  • 2 tbsp of Basil Pesto
  • 1/4 cup of Breadcrumbs
  • 1 tsp of each: salt & pepper
  • Olive oil for cooking

Heat olive oil in a non-stick pan over medium heat. Mix the ingredients together (minus the oil) and form into (4) patties. Cook evenly on both sides until the middle is no longer pink, about 12-15 minutes.

These babies got a little browned but their flavor was amazing! We ate them plain with a side of sweet potato fries but they would be great on a bun with lettuce, tomato & avocado!

Do you ever have one of those snack items that you ALWAYS buy? Mine is these:

I buy these weekly and never get tired of them. I’ve always wanted to re-create them but sometimes bars should be left alone. Whenever I’ve experimented with re-creating bars, they end up falling apart or not being as great. I decided to make these as a sort of truffle bite. Here are the makings:

Chocolate Dipped Coconut Luna Bar Bites

  • 1/2 Cup of Rolled Oats
  • 1/4 Cup of Shredded Coconut
  • 1 Tbsp Coconut Oil
  • 1/4 Cup of Maple Syrup
  • 2 Tbsp Sliced Almonds
  • 2 Tbsp Almond Butter
  • 2 Tbsp Almond Flour
  • 2 Tbsp Unsweetened Cocoa Powder
  • 4 Tbsp Protein Powder (I used Chocolate)

Add all ingredients to a food processor and blend until almonds are crushed and oats are ground. The mixture should stick together and then you will roll it into 8 balls. Sprinkle some extra coconut on top and store in the fridge for freshness! Or just eat them πŸ˜‰

They are extremely rich and are a perfect mid-afternoon sweet snack or after dinner dessert bite. You really only need one because of how rich tasting they are. BUT of course you will want more than one.

I hope you enjoy! I have a major addiction to buying Chocolate Covered Coconut Luna Bars and having some homemade bites helps me not buy them all the time! Now to keep them hidden from my husband so he doesn’t devour them all in one day…
