Good morning! Sorry for the lack of blogging over here, life has been crazy lately. When I last checked in, I was headed out of town to throw my friend Victoria a bachelorette party. Little did I know that I’d wake up last Wednesday morning with a cold that has plagued me for over a week. After a weekend of partying and visiting family, followed up with 11 hour work days this week, my body is mad at me. I ended up in the doctor’s office yesterday with a fever and chills and a prescription to rest. I’ve been going non-stop since we moved here with work and then going out of town just added to it.
I was up at 6am this morning to work but the employee I had to train called out sick so I have a few hours to relax this morning. After sleeping from 5-8 yesterday evening and then 9-6 this morning, I think I’m caught up. Still feeling under the weather but hoping to recover soon! Here is my life lately in pictures:
I made it to Atlanta last Friday afternoon and met up with Ashley (left) and the bride-to-be, Victoria (right), to get our nails all prettied up for the bachelorette party!
We all headed out to dinner at STRIP restaurant at Atlantic Station. It was great to catch up with Ashley! We have a problem where our “good side” is the same so we always fight over who gets to have it in pictures 🙂 If that’s the only problem in our friendship, I’ll take it! 🙂
As always, it was lovely catching up with my wonderful friends Emily & Alex. These girls are the sweetest and I miss them so.

I’m so glad that we were all able to get together to celebrate this lovely lady! It’s crazy to think but Victoria and I have been friends for 8 years, since we met our freshman year at the gym in college. The funny thing is, she was the fit one who was always running and I was always running to the ice cream station in the cafeteria. I’m glad that has changed! 🙂

After a fun night out at Whiskey Park at the W Hotel, I made my way down to Newnan to see my family. I was so thankful for the opportunity to visit with them while I was in town. My sister and her family drove down to visit too!
My mom, sister and I enjoyed some time outside in the sunshine. I just love our home in the woods.
I also had time to catch up with my cats.They like to bathe each other, that’s love.
Ping pong enjoyed some Mimosas. Yes, that’s his name.
Sadly, I had to leave on Monday morning and while I was sick over the weekend, I never felt awful. By Monday evening I was ready for a work out! I put Zuzana’s Power Cardio Series in and got to work! Little did I know that my body did not need to workout being sick. That was the last day I worked out this week and I’m trying to recover to start the 4th round of Tina Reale’s Best Body Bootcamp next Monday!
I also made a Publix run in Montgomery, AL on my drive back. We are getting a Publix here in April and I am beyond excited for this! I was able to pick up some fresh Cauliflower to make Cauliflower Mashed “Potatoes”. You can either steam your Cauliflower in whole pieces or if you already “riced” your Cauliflower you can steam it like that for about 7-9 minutes.
Once it was cooked I added it to the Food Processor with (1) tbsp of Olive Oil and (2) tsps of Garlic & Parsley seasoning.
Process until it turns into a smooth mixture like mashed potatoes! They were delicious and seriously reminded me of mashed potatoes. You can play around with the flavoring, add butter, whatever works for you!
I had a sweet tooth later but wanted something slightly healthier. I found this recipe for Coconut Date Cookies and decreased the sweetness/health-ified it up a bit.
Coconut Date Cookies (Gluten Free)
- 15 Dates
- 1/4 cup of Almond Meal or Gluten Free Oats
- 1/2 cup of Shredded Coconut
- 1 Tbsp of Maple Syrup
- 1 Tbsp of Coconut Oil
- 1 tsp Baking Powder
- 2 Tbsp of Coconut/Almond Milk
Process the dates until they are in smaller, fine pieces. Add the remaining ingredients and pulse until all ingredients are mixed together. Form 12 dough balls and then press down with a fork on a greased cookie sheet. Bake at 350 for 10 minutes and let cool slightly before eating.
Eat up! Darin always eats all the cookies when I make them. So unfair.
Ok, I promised you a Booty Shaping Workout last week and have yet to deliver. Here it is! Remember to warm-up for 10-15 minutes before you get to work and cool down and stretch after! I did a 10 minute warm-up run and then worked my booty off. If you are interested in some more booty work-outs, Zuzana is doing a booty week on her site! Check it out.
Booty Shaping Burn-Out
There are 3 Total Sets. You will start with Set 1 and complete 12 reps of each exercise, back-to-back, 3 total times. When you finish with your 3rd round of Donkey Kick with Leg Lift. Move on to Set 2 and repeat the same instructions. For any exercises that use one leg at a time like Split Squats or Step-Ups, do 12 reps per leg. Links to exercises you may not know, below:
- Hamstring Curl with Stability Ball
- Donkey Kick with Leg Lift <Do (1) Donkey Kick and then (1) Leg Lift (same leg)
- Split Squats
- Bench Jumps
