Good evening! Happy Monday to you all. It was so hard to work indoors today as I saw the temperatures climb to 82 and Sunny. But I know that once Summer hits I’ll be hitting up the beach on the weekends so I am very excited for that! I’m looking forward to seeing this…
This past weekend was fun. Friday night I made another Cauliflower & Spinach Crust Pizza with these toppings:
- 1lb Ground Turkey
- 1 Red Bell Pepper
- 1 Yellow Squash
- 1 Cup of Diced Tomatoes
- 2 Cups of Chopped Kale
Soo yum. We ate the whole thing. Again.
On Saturday night we had our friends Brittany & Matt over for dinner.
Some of the eats on the agenda, which were all in St. Patrick’s Day green theme:
Strawberry & Almond Salad
+Strawberry Mojitos (for St. Patrick’s Day of course, trying to work that green in)
We had fun.
A little too much fun, this girl makes me laugh.
We sat around the table and talked a lot. We all chatted it up like crazy and laughed the whole time.
After dinner & drinks we had a fire in our outdoor fire pit. It was the perfect weather too.
Sunday was all about relaxing and napping since we stayed up until 2:30am the night before. << I never do this and was so exhausted.
I recovered in the evening with a nice Fitnessista workout. You guys need to give this one a try, the Lean Mean Leg Workout.

My HIIT (High Intensity Interval Training) was this workout I came up with:
You will split up the 20 Minutes of HIIT Training with 10 Minutes of 1:00 hard work and 1:00 light work. Then you will finish with 10 minutes of 1:00 hard work and :30 of light work.
This morning started with a nice recovery breakfast of Eggs + Spinach, Grapefruit & Coffee. I am re-focused on clean eating after eating waaay too much on Saturday night.
I’ve been sitting on the back patio while writing this, it’s such a nice evening. Well that’s all folks, I’m off to the gym! Time to get in some cardio and upperbody/ abs workout. Come back later this week for a 10 Minute Ab Burning Workout- getting ready for the beach!
