Red Wine + Oscars = Perfect Sunday Night
Last week I had many mornings where I would wake up and want oatmeal but was out of my favorite Kashi Honey & Cinnamon Instant Oats and have yet to find it here in Mobile. Because basically, Mobile sucks at grocery store options. Winn Dixie & Wal-mart are the south’s favorites but I HATE them. I’m a Publix, Kroger & Trader Joe’s girl. Anyways, moving on. I decided to make a big batch of Slow Cooker Steel Cut Oats to have on hand to re-heat throughout the week.
I used this recipe for Overnight, Slow Cooker Apple Cinnamon Steel Cut Oatmeal and subbed Coconut Oil, Maple Syrup & Coconut/Almond Milk for Butter, Brown Sugar & Low Fat Milk. Sadly I was out of Cinnamon. Who runs out of Cinnamon? This girl. I use it on the daily.
I cooked mine on Low for 7.5 hours. They turned out great! I read on Monica’s blog that if you remove the lid from your slow cooker you add 30 minutes to the cook time. So I let them cook away and didn’t remove the lid until time was up!
The bottom right picture shows them in a big glass container. I added them all to a glass Pyrex container so that I can store them in the refrigerator for the week and then re-heat individual portions throughout the week. Just simply add some milk & reheat! Perfect for on the go! And they taste amazing.
I also made some Cauliflower Rice by shredding a head of Cauliflower in the Food Processor. If you don’t have a food processor you can use a grater, it will just take a little while 🙂
I removed the stems and leaves and then rinsed the cauliflower head. Make sure to rinse your Cauliflower even if it’s wrapped up, it still gets dirty. Then I used the shredding attachment for my food processor.
Look how much “rice” you get!
I separated 2 cups on the side to use for a Cauliflower Crust Pizza later this week. I’ll let you know how it turns out!
Then I used the rest of the “rice” and whipped up some Pumpkin Curry Chicken over Coconut Rice from Juli @ Paleomg. This is such a great recipe that I come back to. These 3 Ingredients are a winning combo:
Yum. I could really just eat the coconut “rice” in this recipe by the spoonfuls. But the Curry sauce is just so good. You must try!

I would like to share photos of me at the gym but I have yet to take one there. I get nervous when I start at a new gym to take pictures because of the “rules”. Don’t worry I’ll sneak some in for you. I did an interval run session + abs on Saturday and my last workout from this week’s Best Body Bootcamp on Sunday. As Spring is quickly coming, I wanted to give you guys a workout that will score you a toned tummy & tush! This workout mixes strength & cardio that focus on your core & butt. The two things you notice in a swimsuit 😉 You will complete it Circuit Style where you will do 10 reps of each exercise in the first Circuit back-to-back for a total of 3 times. Then move onto Circuit 2. Complete all of these circuits this way and then BONUS: Cardio HIIT Training- Do 40 seconds of Mountain Climbers, 20 seconds rest then move onto Star Jumps. Repeat 2x. HAVE FUN!
