Good morning! Happy Wednesday! I have two recipes to share with you today! One is a simple soup recipe that I threw together the other day and it ended up tasting delicious. The second is a great snack to have on hand that has a protein punch and will give you energy! I’m linking up with Jenn at Peas and Crayons for What I Ate Wednesday as these have been recent eats. Flavor

Kale, Lentil & Quinoa Soup

  • (1) 32oz. Container of Vegetable Broth
  • (4) Cups of Kale
  • (1) Cup of Lentils
  • (1/2) Cup of Uncooked Quinoa
  • (2) Tbsp of Cumin
  • (1) Tbsp of Garlic & Parsley Seasoning
  • (2) Tsp of Salt (or more to taste)
  • (1) Tsp of Pepper

Cook the (1) cup of Lentils in 2 cups of water. Drain and then add the Vegetable Broth, Kale, Uncooked Quinoa, Cumin, Garlic/Parsley Mix, Pepper & Salt into the pot.

Heat the soup to medium-high for 5-7 minutes and then reduce heat and let it simmer for 15-20 minutes. I actually left this on simmer for an hour and then came back to eat it later. The flavors had all soaked in. The quinoa will cook up on it’s own so you can just throw it in there and not worry about it.

You can even add ground turkey for an extra protein kick although the lentils and quinoa already add a good amount of protein to this recipe. Easy peasy!

I love to have little snacks prepared at the house so that when I need a little pick-me-up or pre-workout snack I have them ready. These Protein Balls are perfect for that. I love Fitnessista’s recipe for Amaze Balls but I switched them up a little bit and made a Chocolate Pecan Pie version. Oh, and I went ahead and doubled the recipe for you because these babies get eaten up fast.

Chocolate Pecan Pie Protein Balls

Adapted from Fitnessista’s Amaze Balls

  • (4) tbsp of Almond Butter
  • (2) tbsp of Pecan Pieces
  • (1) tsp of Cinnamon
  • (2) tbsp of Cocoa Powder
  • (2) tbsp of Chocolate Protein Powder
  • (2) tbsp of Maple Syrup

Add dry ingredients + almond butter first to the food processor and pulse. Then add in maple syrup and pulse until the mixture is like the picture on the right. The mixture will be clumpy and stick together. (I’m sure you can use a chopper/blender to make these too with a little patience.)

Roll them into balls, about two-bite size is what I like to make.

They are almost like dessert and taste amazing. I make these and they are usually gone by the end of the day once my husband gets a hold of them. You need to make these asap.
