Sweet Potato & Salmon Quinoa Stir-Fry
- (1) lb of Fresh Salmon
- (2) Medium Sweet Potatoes
- (1/2) Cup of Dry Quinoa
- (1) Bunch or 4 stems of Fresh Kale
- (1/4) Cup of Fresh Cilantro
- (1/2) Red Onion
- (1) Clove of Garlic
- (2) Tbsp of Olive Oil
- (1) Tsp of Salt
- (1/2) Tsp of Pepper
- (1/2) Lime
- (3) Tbsp of Honey
Preheat oven to 400. Place the salmon skin side down in a baking pan and add the juice of 1/2 lime on top of the salmon. Drizzle 1 tbsp of honey on top of both salmon filets and bake for 10-12 minutes, uncovered. While the Salmon cooks, be cooking the Quinoa on the stove so that it is done when the Salmon is. Remove the Salmon from the oven, let it cool and chop into 2″ pieces. Put the Salmon and Quinoa to the side.
Peel and chop up the two sweet potatoes into bite size pieces.
Cut up the kale into bite size pieces, removing the main stem.
Chop the Onion and Garlic into small pieces.
Add the olive oil and Sweet Potato to a big pot (Dutch Oven if you have one) and cook over Medium heat for 12-15 minutes until the Sweet Potato starts to brown and soften. Make sure to stir often so the potato doesn’t stick or burn.
Add the onion, salt and pepper and continue to cook over Medium heat until the onion softens as well, 5-7 minutes.
Add the garlic, chopped cilantro and kale until the kale cooks down, about 2-3 minutes.
Add the Salmon, Quinoa and honey and mix it all together. Let it cook until the salmon and quinoa heat throughout, about 3-4 minutes.
This meal turned out delicious! The mixture of the Sweet Potato, Salmon and Honey was Sweet. But adding the Kale & Onion brought all of the flavors together for a Sweet & Savory Blend of flavor! I hope you try it, it’s delicious! My husband is not a Kale lover and he thought it tasted great in this dish.
