Good afternoon! The last 24 hours have been eventful and I feel like I have said that already this week. It’s been an eventful week in general!

As I said a few posts ago, the bottom of my car needed to be put back on so I took it to the shop. On the way home, my car started over heating and the temp gauge was going crazy. Most people would probably pull over on the side of the road but I’m pretty used to something going crazy everyday with my car. It’s been a lemon from the get go. I took it to the shop yesterday morning (again) and to spare you boring details of car parts, it was going to cost $1,200 to fix. I laughed and walked out. I drove my car home and Darin and I decided, after research and planning over the last few weeks, that it was time to get a new car.

All that to say, I have a new 2013 Chevy Equinox! My first “new” car in my life and I’m so excited to not have to worry about breaking down every week. We researched a lot of dealerships and compared pricing until we got the best deal along with a good trade on my piece of crap car.

I wanted the Ashen Gray color and the two tone interior and they had one in stock which was great.

I’m so grateful and thankful to have a new car!

I was going to share Wednesday’s dinner recipe with you yesterday but we were at the car dealership for 5 hours last night so I didn’t get around to it.

Flavor

Based on our meal plans, Spicy Tilapia Tacos were on the menu. I LOVE fish tacos and wanted to spice up the flavor. I used the Sweet Chile Sauce from my foodie pen pal package last month which was a bonus!

Spicy Tilapia Tacos

  • 4 Tilapia filets
  •  4 tbsp of Sweet Chili Sauce
  •  1/4 tsp of Cayenne Pepper (can leave out if you don’t like spicy)
  •  2 tbsp of Carribean Jerk Seasoning
  •  1 tbsp of Olive Oil
  •  1 avocado
  •  1 tomato
  •  2 cups of baby spinach
  •  4 Ezekiel Sprouted Grain Tortillas

After rinsing and drying the tilapia filets, add the cayenne pepper and jerk seasoning. Add olive oil to a pan over medium heat and add the tilapia to cook.

Once the filets are starting to cook, pour the sauce over the filets and let it all cook together for 5-6 minutes. Tilapia doesn’t take long to cook!

Remove the tilapia from the pan and cut into slices to fit in a taco. Setup a taco bar and pile on your toppings!

I like to do baby spinach on the tortilla followed by the tilapia and the tomato and avocado on top! It’s so delicious and had the perfect amount of spiciness.

Trying to get a taco to lay on it’s side and hold for the camera is a pain in the butt. These tacos literally stayed on my plate for a minute. So yummy.

Do you like spicy food? My husband loves spicy but I’m just now starting to like it, but only a mild form of spicy 🙂
