Good afternoon! I hope that you guys are excited for the weekend, I’m ready for some fun in the sun.
For breakfast this morning I whipped up a two egg omelet with spinach and goat cheese. A great combo and got my veggies in! I added it to an Ezekiel Bread Tortilla and ate the extra eggs on the side.
For lunch I wanted my leftover Two Bean Quinoa Salad so I added it to a bed of Baby Spinach and added some carrots and goat cheese to the top. No dressing needed for this salad, the juice from the Quinoa Salad is all I needed!

One of my favorite health and fitness bloggers is Tina at Carrots n’ Cake. She is so motivational and is a Crossfit fanatic. I did a bootcamp for two months that was Crossfit based and I saw great results from it, especially in my overall strength and body fat loss. While I can’t join a Crossfit box right now, you can do workouts at home. Here is one from Tina that is awesome!
