Happy Thursday! Today was crazy busy at work and we are still moving our stuff into our new apartment so I haven’t had time to blog very much. Tonight is the last time to enter the giveaway– 12 a.m. EST. I’ll be posting the winner in the morning!

Fitness

After doing a warm-up on the treadmill, I completed this workout focused on arms and abs. This week I’ve been rotating arms and abs with butt and legs on alternate days. Here is your Show It Off Workout- show off those arms and abs!

Make sure to stretch out your arms and shoulders very well afterwards.

Flavor

Today I worked all day and didn’t get in a Thirsty Thursday smoothie but I did make one of my favorite dinner dishes for you to try- Roman Chicken
Adapted from Giada’s Roman Chicken

Ingredients:

(4) chicken breasts

(1/2) cup chicken stock

(1/2) cup of white wine

(3) oz of prosciutto (can be omitted if you don’t like)

(1) red bell pepper

(1) yellow bell pepper

(1) orange bell pepper

(1) 15oz can of diced tomatoes

(1/4) cup of olive oil

(2) cloves garlic

(1) tsp oregano

(1/2) tsp of pepper and (1/2) tsp of salt

+ 4 chicken breasts and prosciutto. I just think pictures of raw meat on a plate are kind of gross.

Steps

Heat olive oil in a skillet, season chicken with salt and pepper and cook, browning both sides. Remove from heat and put to the side.

Chop up bell peppers, prosciutto, and garlic and add to the pan to simmer.

 

Let the peppers, prosciutto, and garlic cook for 5 minutes, stirring often to keep from burning.

Add the wine and chicken stock to the mix.

Now add the tomatoes and oregano.

Add the chicken to the mix and cover the filets with the vegetable mixture.

Let it simmer for 15-20 minutes depending on how thick your chicken is. Check it occasionally to see if the chicken is done in the middle. I like to put this Roman Chicken on top of Quinoa.

Add the chicken and mixture on top of quinoa.

Eat up and enjoy! It’s delicious and my husband’s favorite dish that I make.

DIY Coffee Zest Body Scrub

1/2 cup used coffee grounds
1/2 cup honey
1 Tbsp. fresh orange zest

DIY Spicy Sugar Scrub

3/4 cup sugar
2 tsp. ground cloves
1 Tbsp. dried rose petals
2 tsp. grated orange zest
1 1/2 cups sesame oil
 
 

DIY Honey Body Scrub

1 tsp. pure honey
1/4 cup light olive oil
1 cup raw or granulated sugar
2 tsp. fresh citrus zest
